Lavender Buttermilk Poppyseed Pancakes

You'll need:

  1. 1 cup all purpose flour

  2. 1 cup unsweetened soy or almond milk

  3. 1 tsp apple cider vinegar (ACV)

  4. 2 tsp baking powder

  5. 1 tsp poppy seeds

  6. 2 TBSP lavender sugar

  7. 1/2 tsp salt

Make it:

  1. Add ACV to plant milk, stir, and let it sit to curdle

  2. Mix flour with baking powder, lavender sugar, and salt

  3. Once milk is curdled (should look lumpy), add it to flour mix and stir to mix

  4. Don't over-mix. Mixture can have bubbles and be a little lumpy and it's okay.

  5. Scoop pancake batter unto griddle and allow it to spread into round shapes

  6. I set the electric griddle to 375 degrees Fahrenheit.

  7. Garnish with fresh berries and serve with warm maple syrup
